I don't know if this matches your interests exactly, anyways, I am working on a dissertation titled "audio watermarking through
parametric representations" so I've done some survey.  For psychoacoutic models in particular, there've been plenty of literature.
A good beginning point, for example, would be Cox et al's text on watermarking -- there is a section for audio watermarking, 
and detailed algorithms for computing the masking threshold is given.   
More refined models on psychoacoustics can be found from the classic Zwicker and Fastl text on psychoacoustics.

If you are interested in multichannel audio watermarking, I remember
(vaguely) there is
a paper in ICASSP04 that reports a data payload of several kbits/sec, so you may want to check the conference proceedings.
